Ingredients
- 3 potatoes (or fewer; 3 was a bit much)
- 1 onion
- 2 tomatoes
- Half a bowl of minced pork
- 1-2 eggs
- White pepper
- Light soy sauce
- Garlic
Steps
Peel 3 (or fewer) potatoes and 1 onion. Slice the potatoes, onion, and 2 tomatoes. Cut a V to remove the onion and tomato cores.
Put minced pork in a bowl. Add white pepper, soy sauce, and an egg (or two, if you have more meat). Mix.
Heat the oil using high heat. Put in the potatoes and fry until the edges are golden. Lower to medium heat once the oil is hot. Once golden, push potatoes out of the oil to drip dry at the side of the wok, then transfer to a plate.
Plop a spoonful of the meat mixture into the hot oil. Flip the meatballs when they're solid and flippable. When nicely brown, push them to the side to drip dry then transfer to a plate. Before adding the next batch of meat, scoop the weird bits out of the oil.
Clear the old oil and add a bit of new oil. Add garlic, then light soy sauce, then the potatoes and meatballs, then a bit of water (rinse out the bowl that was used for the meat mixture), then onions and tomatoes. Add more soy sauce. Done!
